Small Setup
I'm thinking of cobbling together a system that would be used only during power outages to (mostly) run a standard sized AC fridge/freezer for up to 2 full days. I'm pretty sure of the components I need but not really how "beefy" they need to be. Just kind of kicking it around & learning stuff online.

Yup, if you don't have one already. I'd suggest picking up a kill a watt. It'll measure your fridge's (and anything else you plug into it) power consumption. That will help you size your system and in general reduce energy consumption, and find phantom loads.
