I really like this idea. Although I must admit, if/when I decide to do something like this I might just end up looking at faucets with the motion controlled valve.

I would start with a drummers base drum pedal. It can have a good spring mechanism and some have a chain that can be fastened to a ball valve handle with a bit of experimentation.

That sounds quite viable to me, and inexpensive as well assuming you can find a pedal. Of course you could also make your own out of whatever. Its not a horribly complex mechanism.
