Keep in mind your audience in a place like this. There's a special beauty in a pile of hardware assembled and functioning as it's creator intended. Either way, your bundle of jumpers and components approach seems familiar to me and similar to my prototype.
I presume the big 40 Amp SSR is meant for your compressor?
RJ-11 (telephone) jacks and plugs seem to be the ticket for the sensors. You can use inexpensive telephone wire for long sensor runs too.
