i've been using Libreoffice and still use it to add column headers and remove/adjust rogue data from my CSV files however for visualising it's not great.
The ability to zoom in on a day or hour of data then be able to scroll forward and backwards in time is so useful when you have a long term datalog(or high speed logging).
I know it should be possible to create this functuality in a spreadsheet, but the time involved and having to modify it every time i add new sensors to the system is not worth it.

I'm currently implementing the control system for my ASHP to under floor heating and hot water tank.
Without the datalogging i would never have spotted several issues effecting efficiency and possibly destroying the heat pump.
