Sounds pretty good to me. I believe my on demand electric water heater uses 1.5-2.0 kWh per shower (approx 10 minutes).

Out of curiosity, how much would it cost to go to a full sine wave inverter that is big enough to just run the A7? ROI would probably be horrendous, but I'm curious.

I don't know why you'd have humid air in your attic in winter. The outside air should be very dry. If you have humid air it must be coming from some other place.
