I'd put it in the flame too. Copper's melting point is pretty high (higher than other soft metals) @ 1984°F. That is a very hot flame. Like you said, you also have much cooler water running...

I'd think some sort of air vent with a valve to allow the heat to bypass the cooking surface would work nicely.
