Maybe the HVAC guy is correct, you don't need a mixing valve.

Just control the water heater temp our of the heater and run the water directly to the distribution manifold.

The black wires in and out are thru a current sensing resistor. The red wires are just a pass thru so only one needed to power the meter and could be tied to the other side of 220AC or to neutral.

No, very easy removal. The sense tube is an intergal part of the thermostat. It has a glan nut on it that seals in the header that also seals the evaporator tubing into the tank.

Not so! Slinky ground loops normally have a D to d ratio (slinky D to tube ID) of about 50 to 1. Bend radius caused turbulence occours at ratios <2/1.
